This exceptional coffee is grown by smallholder farmers from in and around Woreda County of Gera, in the Jimma zone, Oromia region. This region is very well known for its vital role in coffee production in the country of Ethiopia. The Jimma Agricultural Research Centre (JARC) has worked to develop resistant and tasty varieties for the Ethiopian industry and also to enhance the agricultural training needed to cultivate them. Working with Agricultural agents, farmers in this region can avail of new support to help combat climate difficulties, improving sustainability, new planting initiatives, as well as support for the local eco-system.
Around 85% of Ethiopian families live rurally, thus making a living from agriculture is vital. In Jimma, coffee is a main cash crop, often known as 'Garden Coffee' - covering from half a hectare to 1.5 hectares. The coffee is usually planted alongside a second cash crop known as 'False Banana', as it simply looks like a banana tree, with the purpose of providing desired shade to the coffee trees.
Coffee is selectively handpicked before being delivered to the mill collection points. Here, coffee lots are separated by quality, farm and date of production. At the mill, the coffee cherry is floated in a tank and sorted by hand to determine over ripe and under ripe beans. Fermentation then takes place in large concrete tanks, for anywhere up to 3 days. The coffee is then washed via grading channel, separating the coffee by quality as well as removing any mucilage. The beans are left on raised beds to dry and turned regularly until the appropriate humidity is reached. A final drying takes place at Primrose drying mill, a small journey from the washing station, where the last steps are taken to ensure the beans are at their best state, ready for exporting.
This is a coffee you might just fall in love with. We find the flavours to be sweet, yet well rounded with rich berry notes along with washes of citrus and occasional bursts of almond and apricot. This is a well structured coffee with a juicy light body - extremely pleasing and a joy to experience.
